(2023) A few Champagne houses, notably Moët & Chandon, have launched special 'Ice' versions of their standard wine, specifically made to be enjoyed poured over ice. Following a very similar path, this from Cava giant Freixenet, is blended to be sweet and rich. Garnacha and Pinot Noir are blended and aged for a year on the lees, the wine bottled with 45g/l of residual sugar making it 'Semi-Seco', the equivalent of Demi-Sec in Champagne. Raspberry and icing sugar aromas leap from the glass, a little touch of buttery pastry from the time on the lees too. In the mouth there's definite sweetness and buoyant fruit flavour, but the acidity is really very good meaning this has balance. I think perhaps the pressure is slightly lower too, so that there is no real feeling of dilution. Good fun this - not a serious wine, but we all need a bit of frivolity in our lives now and again. (2018) A truly charming rosé this, 100% Pinot Noir made by the saignée method, Toni has reduced the time on lees from 24 to 12 months as he thought it retained freshness and lightness. It has 8g/l dosage. Toni also chooses to make quite a deeply-coloured wine, "as that is its natural colour." This has strawberry and a touch of clove or almost Negroni character, lovely freshness and raspberry and lemon clarity to the palate, finishing long and dry.
(2018) 100% Pinot, made by the saignée method, time on lees has been reduced from 24 to 12 months as the winemaker Antoni Llopart thought it retained better freshness and lightness. 8g/l dosage. It's a deep-coloured pink, which Antoni chooses to make "as that is its natural colour." This has strawberry and a touch of clove or almost Negroni character, lovely freshness and raspberry and lemon clarity to the palate, finishing dry. A delicious Cava of real quality.
(2016) There has been a steady stream of Pinot Noir-based rosés emanating from Cava producers, and this is as good an example as any. The colour is relatively deep, the wine made by macerating the Pinot for a short period to extract flavour and colour, with small red fruits, cherry and a tight herby back note. Luxurious and mouth-filling with its mousse and sweet strawberry-touched fruit, but a nip of tannin and good acidity give it a dry and food-friendly finish.
