Food Lockdown Loaves

100% sprouted spelt (same flour company as previously); 75% hydration.
To me this Spelt loaf has the least interesting flavours of the three specific wheat flours tried recently (Kamut, Einkorn, Spelt). My first reaction this morning was dislike in comparison to Kamut or Einkorn, but I am now wondering if there was a bit of bunt in the harvest which can impart some unpleasant flavours to the flour.
