A mature Westvleteren 12

I opened an aged 330ml bottle of Trappist Westvleteren 12 from (COVID riddled) 2020, stored upright in the cellar under crown cap for five years and it was well worth the wait. It poured a deep reddish-brown with barely any head, just a few bubbles that faded quickly. The nose was complex with lots of dried fruit like figs and dates, some brown sugar, and a slightly savoury note that reminded me of old wood. The flavour was smooth and rich with a gentle prickle of carbonation still present. I tasted molasses, dark bread, roasted nuts, a little spice, and the alcohol gave it a soft warmth rather than a kick. Still plenty of life left but drinking beautifully now. Definitely one to enjoy slowly and without distractions. Decanted carefully to avoid the bitter sediment. Serve at cellar temperature 10.2%abv (probably about 93 beer pts)
