The perfect Negroni

I had a negronis in a pub in Brighton made with Buckfast ! Actually wasn’t bad.
I believe the popularity of the Negroni in large part stems from its un-eff-up-ability and customisability within a very simple template. It is difficult to make a truly bad Negroni or variation on it.

My favourite Negroni riff is a 'Toffee' Negroni: 45 ml of Havana Club 7 (or similar aged dark rum), 30 ml Amontillado Sherry, 30 ml Campari, garnish with an orange peel - it really does taste of toffee.

That said, I prefer the Boulevardier in general. I think whisky is more balanced and characterful than gin is in this drink.
 
Waitrose sell clear ice that’s good in a pinch or if your freezer is full.

For negroni/boulevardier I think the ratio has to flex with the ingredients. Martini bitter for example is massively more intense than Campari, so I use a lot less in the ratio. Some vermouth can be much more intense. One approach that might help Ray is to make up smaller volumes as test batches, and/or taste while building it.

A visit to Mexico introduced me to Mezcal and it's highly delightful bastard child mezcaloni.
Basically substitute the gin with mezcal and enjoy. The smokiness adds an extra element of flavour which just increases the adult enjoyment.
Further experiments have involved substituting vermouth with madeira. Sercial and verdelho both work but have a slight tendency to bully other flavours so a light pour of the madeira may be beneficial.

Kol do a good one based on mezcal. They sub in Cynar for the vermouth I think. The Campari stays.
