Cabardes in the South of France is an unusual Appelation Controlee (AOC), as it allows the mixing of Mediterranean grapes like Syrah and Grenache with Atlantic grapes like Cabernet Sauvignon, Cabernet Franc, Merlot and Malbec. Though such blends are now quite common in wines carrying the more relaxed Vin de Pays classification, for AOC wines this inter-mingling is most unusual. This wine comes from vineyards planted at altitude and is a mix of all of the grapes mentioned above. Aged in oak barrels, it has a vinous nose: the aromas are dark and savoury, of vine fruits, cedar and meatiness, with spices and little cherry notes coming through. It smells deep, serious and savoury. On the palate it has a fleshy depth of sinewy black fruit and tannin, rounding out with oak, and with a keen cherry acidity to keep it fresh. This is a serious style of wine that will cellar nicely for five years or more, or right now, will come into its own with grilled meats.
